The climate in San Juan is continental and arid, thus dry and healthy for olive plantations. Temperature ranges between 37°C (98,60°F) in summer to -0ºC 32,00ºF in winter. Warm sunny days and cold nights are constant through out the year, though they present the proper variations of each season.

The average temperature in summer oscillates between 26°C (78,80°F), 18°C in autumn, 10°C (50,00°F) in winter and 19°C (66,20°F) in spring.

Pressure reaches its highest level in June, July and August, and its lowest one is registered in December, January and February. The average annual pressure is 705,74 mm. Humidity nearly disappears with the strong Zonda winds. The climate in the province is also subject to the influence of the San Juan River. Predominant winds blows from the south, the southeast and the warm and dry Zonda from the north.

The latter blows any time of the year, most frequently in August and October, increasing the normal temperature to 20°C (68,00°F). The Project records weather conditions with two METOS weather stations of Austrian origin, which measure and storage weather data in intervals of 15 minutes continuously. Stations transmit data via SMS to Internet making it possible to have on-line access to its records.
